in a tent, cabin, or RV; at a campground, state park, or a primitive spot, there’s at least one thing we can all agree on- We LOVE s’mores. No matter the time of year, over a fire or a grill, inside or outside, we need more s’mores in our lives. There will always be a special place in my heart for the traditional s’more, but I love trying new things. If you haven’t tried a s’mores variation, DO IT! It’s taking a perfect thing and making it perfect-er. Have fun, try new things, and maybe you’ll find a new favorite.

 

Last night was the only free night we had for doing s’mores. Even thought it was overcast and a little drizzly, we still got out in our backyard, lit up our tiny charcoal grill, and had a great time. The kids loved putting together their own combinations- which mostly consisted of several types of candy stacked up under a marshmallow LOL!  I put all the ingredients on a tray and everyone went to town.  We don’t have official s’mores sticks yet (we used large kabob sticks over our very small fire), but Rowan is so obsessed with s’mores, these MalloMe Marshmallow Sticks somehow made their way onto his Christmas wish list LOL!

Here’s some of our favorite s’mores variations:

1) The Classic S’more
The Ingredients: honey graham crackers; milk chocolate bars, marshmallows.

The Method: Easy- roast marshmallows to your own idea of perfection, stack the chocolate and marshmallow up into a graham cracker sandwich, and enjoy!

2) Peanut Butter Cup S’more
Ingredients: honey graham crackers, peanut butter cup (1 for each s’more), marshmallows.

Same deal- roast up the marshmallows and just substitute the chocolate bar for a peanut butter cup. This variation is a must try.  It’s Stu’s all time favorite and it may….it may be my favorite as well (I’m not very good at choosing favorites LOL!  I love everything!).

3) Dark Chocolate Raspberry S’more
Ingredients: honey graham crackers, dark chocolate bar, fresh raspberries (or any berry), marshmallows.

For the sophisticated glamper.  It’s made the same way as the classic s’more, just add 2-3 raspberries between the dark chocolate and marshmallow.  Rowan wasn’t a fan of the dark chocolate, but he loved the raspberries.  This was so rich and full of tart flavors- I loved it!

4) Salted Caramel S’more
Ingredients: honey graham crackers, milk chocolate bar, caramel squares (the ones I bought were more cylinder shaped), Course kosher salt (just a pinch), marshmallows.

Roast up the marshmallow, place the caramel (I ended up cutting mine in half long ways so it wasn’t as thick and would soften better) on top of the chocolate, sprinkle the salt on top of the caramel, add the marshmallow to the sandwich.

5) Caramel Apple S’more

Ingredients: honey graham crackers; caramel squares; thin sliced granny smith apples (or really whatever you have on hand), marshmallows.

Layer a couple slices of apple, caramel, and just add the roasted marshmallow.  Stuart really liked this one (not as much as the peanut butter cup, but I don’t think he’ll ever stray from his first love LOL!).

6) Banana S’more
Ingredients:  honey graham crackers, sliced banana, milk chocolate, marshmallows, Optional: peanut butter.

Super simple- just put a few slices of banana and chocolate on the graham and add the marshmallow- so sweet, and surprisingly my favorite of the new variations.  It was the first one Rowan tried, and he was in love.

Another variation to this that I didn’t take pictures of, is spreading a little peanut butter to one graham cracker for a banana, chocolate, and PB s’more. Delish!

7) Mint S’more
Ingredients: honey graham crackers; mint chocolate (like Andes or a York Peppermint Patty- which would be quite strong compared to the Andes mints), and marshmallows.

Just make it like a classic s’more. Yum! Tastes like Christmas!

8) S’mores Dip
This is our favorite alternative to s’mores, especially when we’re stuck at home where we have no fireplace and we have an electric stove. We’ve been making this a couple times a year since the beginning of our marriage- it’s EXCELLENT when entertaining, stuck inside, or when you’re feeling lazy and just want to sit on the couch scooping s’mores into your mouth. This recipe is probably ideal for 4-6 adults, so cut it down if there’s only two of you.

Here’s the recipe:
4 Milk Chocolate bars (1.55 oz)
4 TBSP Milk
Mini Marshmallows- one bag (usually about 10 oz)
Graham crackers broken into fourths.

Melt the Chocolate, milk, and about 2 cups of mini-marshmallows with a double boiler method.  If you don’t know what the double boiler method is, do a quick search online- it’s when you put a small sauce pan with about 2 inches of water in it and bring it up to a boil while you have a heat proof bowl (like Pyrex) sitting on top of the pan (it has to be enough to sit on top of the pan without actually going inside).  An even easier method is in the microwave- use a microwave safe bowl- microwave for about 30 seconds at a time, stirring well each time.

Add melted chocolate mixture to an oven safe dish (such as a casserole dish or pie pan), top with mini-marshmallows and put under broiler until the marshmallows have browned.
Dip the graham crackers and enjoy!
